Smoked Gouda and Mushroom Soup



I named this blog Gourmet Country Girl because that title really does fit me.  I love Gourmet food, fancy ingredients, and specialty grocery stores.  I also love eating just a big bowl of soup beans, corn bread, and some chow chow.  I love shopping in big cities and coming home to our country town.  Thank goodness we can have a little of both!  This soup is pure gourmet.  Rich and creamy with so much flavor.  Smoked Gouda is one of my gourmet ingredients because it can be a bit pricey, but so worth it.  Nothing compares to it's smoky flavor.  I adore it and use it in as many dishes as I can find.  I rounded out this gourmet meal with a big stack of Oreo cookies.  Gourmet and simple, perfect pair.

Ingredients:

1/2 cup butter
1/2 cup all- purpose flour
1/2 tsp. pepper
1/2 tsp. nutmeg
1 cartoon (32 oz.) chicken stock
1/2 cup cooking sherry or more chicken stock
1/2 cup heavy whipping cream
1/2 pound sliced mushrooms ( I used baby portabellas)
2 garlic cloves, minced
2 cups shredded Smoked Gouda cheese


Directions:

In a large saucepan, melt butter. Add mushrooms and cook until tender, about 4-5 minutes. Add garlic and cook an additional 1 minute.  Stir in the flour pepper, and nutmeg until smooth; gradually add the broth, sherry, and cream.  Bring to a boil, reduce heat; and simmer for 5-6 minutes.

Add cheese; cook and stir until melted.

  1. I made this a couple days ago, and it was great! Thanks for sharing. Next time I plan to use more mushrooms, but we're mushroom crazy.
