Ham and Pineapple Quesadillas with Pineapple Salsa

As you have probably noticed I am a big fan of quesadillas. Why not, right? They are easy to prepare and can be filled with whatever your heart delights.  Crispy, cheesy goodness. Yum! I had my leftover ham and pineapple slices and wanted to do something different. This turned out to be a great combination. Eating it, I felt like I was sitting on the beach in some tropical destination, watching the waves crash. Okay, that may have been a stretch but it was a very tropical tasting dish. I am sure it would be delicious with fresh pineapple, however I did not have any so I used some canned pineapple slices and it was still excellent. Take your self on a little tropical retreat, or at least make yourself a yummy quesadilla. The salsa is great with some salty tortilla chips, grilled chicken, and grilled fish too!

Ingredients:

1 1/2 cups chopped ham, cooked
1 small can pineapple slices, drained, chopped
1 green onion chopped
2 cups shredded Mexican blend cheese
8 flour tortillas ( I use the small fajita size)
cooking spray

Spray one side of a tortilla with the cooking spray. Place it spray side down in a medium skillet on medium heat. Top with ham, pineapple, green onions, and 1/2 cup of the cheese. Top with another tortilla. Spray the top of the tortilla. When the tortilla is nice and crisp and brown, carefully flip it over and brown the other side. Repeat with remaining tortillas. Serve with pineapple salsa. Makes 4 servings.

Pineapple Salsa

1 cup chopped pineapple, fresh or canned (drained)
2 tablespoons finely chopped purple onion
2 tablespoons finely chopped green onion
1 Roma tomato, chopped
1 tablespoon chopped fresh cilantro
1 tablespoon honey
2 teaspoons finely minced jalapeno pepper, optional
juice of one fresh lime (small lime)

Mix together all ingredients and refrigerate until ready to serve.
