Granola French Toast with Cinnamon Yogurt sauce



I eat Greek yogurt and granola everyday.  Literally.  I can't get enough of it.  So when I saw this recipe I could not pass it up.  It is awesome!  The sauce is so good.  I love the crunch the granola gives the french toast, no soggy french toast here!  This was a huge hit with the whole family.


Ingredients:
3 eggs, lightly beaten
3/4 cup milk
1 tablespoon sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
1 loaf french bread ( I used wheat french bread)
2 tablespoons butter
1 cup coarsely crushed granola (I use Cascadian Farms)
Cinnamon Yogurt Sauce (recipe below)
Maple syrup (optional)


Directions:


In a shallow bowl, beat together eggs, milk, sugar, vanilla, and cinnamon until well mixed.  Dip bread slices into egg mixture, coating both sides.


In an extra-large skillet or on a griddle melt 1 tablespoon of the butter over medium heat; add half of the bread slices.  Sprinkle some of the granola on top of each slice of bread in the skillet, pressing gently with spatula so granola sticks.  Cook for 2 minutes or until bottom is golden brown. Flip each slice, pressing lightly with the spatula.  Cook for 2 more minutes or golden brown. When removing from skillet, flip each slice so granola side is up.  Repeat with remaining butter, bread slices, and granola.  Serve immediately with Cinnamon Yogurt Sauce and/or Maple Syrup. (Yields 4 servings)




Cinnamon Yogurt Sauce


In a small bowl, combine one 6-ounce container plain low fat or fat free Greek yogurt (you can use regular too), 1 tablespoon honey, 1/4 teaspoon ground cinnamon, and 1/2 teaspoon vanilla.
