Fresh Strawberry Pie

This is one of my husband's favorite things. There is not much better then a fresh strawberry pie. Except for maybe a fresh strawberry pie and Target shopping spree. I'm just sayin'.  We have a patch here in town where you can go and pick your own. My husband eagerly goes. He knows he gets a pie out of the deal. This is the perfect end to any summer meal! You can make it with pie crust or graham cracker crust. We prefer graham cracker crust.


Ingredients:


1 prepared pie shell or graham cracker crust
2 1/2 quarts fresh strawberries
1 cup white sugar
2 tablespoons cornstarch
1 cup water
1 (3 ounce) package strawberry flavored gelatin


Directions:


In a saucepan mix together sugar, cornstarch, and water. Cook on medium heat until sugar and gelatin melts and mixture thickens. About 5 minutes. Mix in gelatin. Cool to room temperature.


Arrange strawberries points up in pie crust. Pour gelatin mixture over strawberries. Chill for at least 4 hours or until set. If you can stand it! Great served with whipped cream.
