Black bean and Corn Quesadillas

We love quesadillas around this house. My kids eat them up. I mean after all it's basically a grilled cheese. I like mine with as much stuffed in there as possible. They are quick to throw together and it's a good way to use up what you have in the fridge. If you like things meaty, throw some cooked chicken in the mix too.


Ingredients:


1 tablespoon olive oil
3 tablespoons onion, finely chopped
1 can black beans, drained and rinsed
1 cup frozen corn, or 1 can (10 oz.) canned corn, drained
1/2 tablespoon brown sugar
1/2 teaspoon ground red pepper flakes
6 flour tortillas
2 cups shredded Mexican blend cheese
butter cooking spray


Heat oil in a large skillet. Cook onion, black beans, corn, brown sugar, and red pepper flakes until onion is tender and mixture is heated through. Remove to a bowl.


Keep skillet on medium heat.


Spray one side of a tortilla with cooking spray and place in skillet. Top with some cheese, bean mixture, and some more cheese. Spray one side of another tortilla and place on top, sprayed side up. Once brown, flip and cook on other side. Repeat with remaining tortillas and mixture. Serve with sour cream, guacamole, and salsa.
